Middle Eastern- Lentil Soup

 

This is one of my favorite soups, and it contains lots of good nutrients! The lentils are loaded with minerals, as is the Swiss Chard. You will find sulfur in the garlic and onions.

Ingredients:
1 large onion, chopped
Minced garlic cloves, as many as you wish
Olive oil
1 cup lentils
One head Swiss Chard, finely chopped
Lemon juice of one or more lemons
Aleppo pepper, or other red pepper
Salt

Method:
In a soup pot, cook the lentils in 8 cups of water until soft. In a frying pan, sauté the garlic and onions in the olive oil. Add this to the cooked lentils. Adjust water to cover all, and add the Swiss Chard. Cook for some minutes, and then add the juice of one lemon, or more, and the red pepper. Add salt. Adjust to suit your taste.

This is a sour soup, so don’t skimp on the lemon.

Cook until all ingredients are well blended.
